A fit horse, properly fed, could carry a light rider more than
100 miles/day. But not for very many days in a row.

Horses walk about the same speed as people (and will snatch bites to
eat while doing so). To maximize speed one alternately trots and walks
(the walk rests the horse).
btw People CAN outrun horses over the long haul. Primitive hunters
often ran down their game till it was too exhausted to run.

How close to reality do you need the simulation rules? Remember that
rules get more complex and slow the game down when getting more
realistic than a certain level of abstraction.
As ref I would use progressively harder tests vs. Stamina + Constitution
with modifications for amount slowed from max sprint speed.

Sure, an Olympic sprinter can briefly exceed 20 mph but it is
more realistic to check Roman marching speeds (20 miles/day?).
I think horses max out at 45 mph.

Remember that most Characters are carrying gear.

Even Olympic athletes can't keep up max speed beyond a couple hundred yards.
